How to Make Best Fluffy Pancakes

The secret of fluffy fluffy pancakes is the batter. If the pancake batter is runny, pancakes will spread out in the pan and won’t fluff up. On the other hand, if the batter is too thick, you are most likely will end with undercooked pancakes.

Perfect Pancake Batter Consistency

To check the consistency of the batter, do the test with a spoon. Simply spoon some batter and pour it into the bowl. The batter should be THICK but be able to run off the spoon slowly.
Many people asked me how to mix pancake batter without lumps. Guys, some lumps are fine! But to avoid them, make sure you sift your flour. Also don’t use a spoon for mixing. I highly recommend to resort to a wire whisk to get a smooth pancake batter.
Another key to smooth texture is the temperature of your ingredients. Bring them to room temperature before adding to the batter.

How to Make Perfect Pancakes

It is actually a 3 step easy process.

  • First, mix all dry ingredients: all-purpose flour, sugar, baking powder, baking soda and salt.
  • Combine wet ingredients with dry ones.
  • Cook pancakes using a non-stick pan.

How to Cook Pancakes

Preheat a non-stick pan/ griddle over medium heat. Spill little water onto the pan to check if the surface is hot. The water will sizzle once it is ready. Reduce the heat to low-medium. Spray the pan with a non-stick spray or lightly grease with some butter. Remove excess butter with a paper towel.
Pour ¼ cup of batter into the pan (use a measuring spoon or cup to get pancakes of the same size).
Cook pancakes.

HOW LONG TO COOK PANCAKES ON EACH SIZE

Cook pancakes until you see that bubbles start forming and popping on the surface, it means they are ready to flip. Flip using a spatula or a fork. The whole process takes about 1-2 minutes.

HOW TO FLIP A PANCAKE

The best tool for flipping pancakes perfectly is a large spatula. If you don’t have any, but you love pancakes and you cook them frequently, I highly recommend to purchase one. Ideally it should be big enough to cover most of the pancake. Flip when you see bubbles popping not only around the sides but throughout the pancake.

FAQs

What is the trick to fluffy pancakes? ›

The secret is in the egg whites!

Yep, egg whites are THE determining factor here. To give your pancakes that fluffy text, beat only the egg whites for 3 minutes on medium speed. They'll start turning creamy, which means it's time to add them to the pancake mixture.

What makes pancakes fluffy and helps them rise? ›

Here's why. Pancakes and waffles typically both contain baking soda, which causes them to rise. As soon as the baking soda is combined with the wet ingredients (which contain an acidic ingredient, like often buttermilk), it starts producing carbon dioxide gas bubbles that cause the batter to rise.

Why are restaurant pancakes so fluffy? ›

The secret to fluffy restaurant style pancakes? Buttermilk! The acid in the buttermilk reacts to the leavening agents in the pancake batter, creating air bubbles that make the pancakes tall and fluffy. It's a simple switch that makes all the difference.

What does an extra egg do to pancakes? ›

Eggs are a crucial ingredient. They provide the cakes with the structure to hold light bubbles. Eggs also give the batter additional, richer flavor from the yolk fat. If you add too many eggs, you'll have “pancakes” that look more like custard or crepes.

What makes pancakes fluffy, baking powder or baking soda? ›

Baking soda is essential for baked goods, but baking powder is really what makes pancakes and biscuits rise and become so super fluffy. Double-acting baking powder, which is the kind that you'll find in the grocery store, produces bubbles in two ways: when it is mixed with wet ingredients and then when it gets heated.

What ingredient in a basic made from scratch pancake batter makes pancakes fluffy? ›

Flour: This homemade pancake recipe starts with all-purpose flour. Baking powder: Baking powder, a leavener, is the secret to fluffy pancakes.

What makes pancakes more airy? ›

Vinegar—an acid—reacts with baking soda to produce carbon dioxide, which gives the batter a lift as it bakes. The acidity also causes the flour's proteins to gently unravel, producing a tender cake that is fluffy and moist.

Why are my homemade pancakes not fluffy? ›

Flat pancakes are nearly always because of expired baking powder, too little baking powder for the recipe size, or too thin of a batter. How to fix flat pancakes: First, test your baking powder by adding a teaspoon of baking powder in a glass and adding a tablespoon of water or two.

How does Gordon Ramsay make the best pancakes? ›

Instead of using a boxed pancake mix, Gordon mixes his own ratio of flour, milk, and eggs with a whisk before letting it sit for about 15 minutes to thicken. Then, using a hot nonstick pan and cooking spray, he'll spoon about a ladle full of the pancake batter mixture onto the center of the pan.

What makes restaurant pancakes taste so good? ›

Restaurants tend to use real, farm-fresh eggs and real milk when making their pancakes, which as you might guess, adds to a richer, higher-quality eating experience.

Why are IHOP pancakes so soft? ›

The secret to creating IHOP's cloudlike fluffiness in its pancakes is the dual action of baking soda and baking powder.

How do you keep pancakes soft and fluffy? ›

(Simply add 2 Tablespoons lemon juice to 2 cups milk and let that sit for about 10 minutes.) The acid in the buttermilk or lemon juice is the key to fluffy pancakes; when the acid reacts with baking soda, the combination forms bubbles, which create lighter, fluffier pancakes.

What causes pancakes not to be fluffy? ›

Over-mixing the batter will develop the gluten in the flour too much, making your pancakes dense and chewy. Not Letting the Batter Rest: Once you've mixed the batter, stop and do something else, like set the table and heat up the griddle.
