    Teriyaki Meatball Bowl Recipe

    I’m going to cut right to the chase here…this Teriyaki Meatball Bowl was amazing! My kids loved it, as did my husband and me.

    I used ground chicken for the meatballs, but ground pork or turkey would work well too. Baking the meatballs also made for an easier, more hands-off cooking process, and that homemade Teriyaki sauce is beyond delicious — hitting all the right flavor notes, sweet, tangy, and salty. SO GOOD!

    If you want to kick up the heat a bit, feel free to add in some red pepper flakes. I normally use brown rice anytime I make rice, but my son has been begging for white rice, so I decided to treat him.

    The brown rice would definitely add some more fiber, so that’s what I’d recommend if you are trying to eat healthily.

    Definitely add these Teriyaki Meatball Bowls to your menu this week…you won’t be sorry!

    Lemon Artichoke Chicken Recipe

    Another one of my favorite, super easy chicken dinner recipes is this delicious Lemon Artichoke Chicken dish. The seasoning is soon tasty, and the chicken comes out perfectly juicy and tender. At just 5 Points per serving, you get a delicious entree that offers a nice amount of protein and fiber with barely any carbs.

    Also, note that the recipe only calls for a tsp of saffron threads, but my photo may show more. I tend to get a little heavy-handed with the saffron because I adore it, but feel free to use as much or as little of the saffron as you want.

    This dish works really nicely over orzo pasta or brown rice, and I like to serve it with a simple side salad for a complete meal. Enjoy!

    Growing, up there was this one little local Chinese restaurant in my neighborhood. I think it was called Chan’s Tea House. But it was the only one nearby, and sometimes my girlfriends and I would skip school and treat ourselves to a nice lunch there.

    Cashew Chicken was always my meal of choice there. It hit all the flavor notes I craved – sweet, tangy, salty, and a tad bit spicy. The crunch of the roasted cashews were my favorite part, though. But since then Cashew Chicken has been a lifelong comfort food of mine. To this day, anytime I have it, it instantly reminds me of skipping school with my friend’s to cozy up for some girl talk at Chan’s Tea House.

    Broccoli Salad Recipe

    If you’ve ever had a Broccoli Salad before, you’ll understand the reason why this salad has become such a popular side dish at parties, buffets, and potlucks – it’s just so flipping GOOD!

    My spin on this well-loved dish uses a few variant ingredients to keep it a bit lighter and more heart-healthy. The crunchy broccoli and walnuts are combined with onions and raisins, then topped with a creamy, sweet, and tangy dressing that is insanely delicious.

    There are lots of variations to this salad, so you can definitely alternate/add/eliminate other ingredients if you want to shake things up.

    Try it with carrots, bacon, pumpkin seeds, candied pecans, dried, cranberries, kale, or even roasted Brussels sprouts.

    I highly recommend adding this as a side dish to one of your favorite dinners, or adding some grilled chicken to it and serving it as a lunch salad.

    One-Pan Cheesy Chili Mac Recipe

    Have I mentioned before how much I adore one-pan meals? With 2 young kids, 3 cats, and a husband who acts like a teenager, they just make my life SO much easier.

    This One Pan Cheesy Chili Mac Recipe was a HUGE hit and I’m really excited to share it. I used extra lean ground beef in this, but you could easily substitute ground chicken or turkey if you prefer.

    The tender, perfectly seasoned meat is cooked in one skillet along with whole wheat macaroni noodles, and then it’s all topped with gooey, melty Mexican cheese.

    Try this recipe, and I’d be surprised if your family didn’t love it as much as mine.

    One Pan Quinoa Taco Skillet Recipe

    As much as I love cooking, there’s nothing more I hate than doing the dishes and cleaning up afterward. Most of my cooking tools and pots and pans need to be hand washed, so depending on the complexity of my recipe, that can lead to a LOT of post-cooking work. This is why I have become a huge fan of one-pan/pot meals – they are super easy to cook and require a lot less cleanup.

    This One Pan Quinoa Taco Skillet Recipe has become a recent favorite in our home. Made with quinoa instead of rice and lean ground turkey instead of ground beef, it’s a lot healthier and absolutely delicious.

    Top with shredded cheese, red onion, avocado, roasted corn, shredded lettuce – or whatever your taco-loving heart desires. Just make sure to count the extra Points you may incur. Enjoy!

    Arugula and Smoked Salmon Salad Recipe

    Talk about a complete meal in one bowl! This incredibly delicious Arugula and Smoked Salmon Salad is absolutely packed with healthy fats, proteins, and carbohydrates. Not only is mouthwateringly good, but it is very filling and loaded with enough energy and nutrition to last you a long time.

    I love making this salad for lunch, and I have no problem not getting hungry until dinner time. Or, I will make this salad for dinner when I want to avoid snacking in the evening (which is my biggest problem).

    The flavor combination in this Weight Watchers salad recipe is outstanding….peppery arugula topped with smoky salmon, tangy balsamic coated tomatoes, filling whole wheat couscous, and wonderfully nutty toasted pine nuts with sweet raisins. All are covered in a creamy, tangy dressing that will leave your tastebuds doing backflips.

    My husband and I are absolutely in love with this Arugula and Smoked Salmon Salad Recipe, and I highly recommend all of you give it a try! It’s one very complete, and satisfying dish for just 9 Points.

    Pumpkin Cornbread Recipe

    Fall is officially in full swing, and like everyone else, I’m on a pumpkin craze. There are SO many amazing pumpkin flavored goodies and treats available right now, it’s insane!

    In addition to trying out some tasty looking products I find at the store, I’ve also been in the kitchen whipping up some homemade, healthy pumpkin recipes too.

    Though it’s been over 100 degrees here this week (boo for California in the fall!), I’ve been working on a Pumpkin Cornbread Recipe that I hope you love as much as I do! Moist, delicious, slightly sweet cornbread that bakes up light and tender boasting a traditional corn flavor, but with a hint of pumpkin and spice.

    Goes AMAZINGLY well with chili or soup, and if you want to spend the extra points, is best when topped with hot butter. So get on the pumpkin craze bandwagon and give my Pumpkin Cornbread recipe a try this fall.

    Swedish Meatball Sauté Recipe

    I don’t know about you guys, but whenever I go to IKEA, I get excited beyond a normal amount, to hit up their cafe and indulge in those amazing Swedish meatballs!

    There’s just something about them that tastes so good and is so comforting. Of course, I know that they are not the healthiest fare, which is why I decided to create a more nutritional version at home. Also, sometimes, I’m just lazy. And I don’t always feel like making meatballs.

    So I thought that maybe I could do a sauté version that would be just as tasty, but super easy. And it was a great success! I served it over some egg noodles, and the kids, the husband, and I all loved it. Super easy and super delicious. Though next time, I’ve gotta make sure I get some IKEA Lingonberry sauce to serve with it, because it’s just not the same without it. Enjoy!

    It’s officially fall, folks, and I love getting in the kitchen and whipping up some hearty, soul-warming soups! My husband’s personal favorite is this Healthy Jambalaya Recipe. It is packed with 3 tasty proteins – chicken, shrimp, and sausage.

    You can choose to make this a tad lighter by subbing out the andouille sausage with some light turkey or chicken sausage, but I’m such a fan of the spicy and flavorful andouille, I’m willing to sacrifice a Point or two for that fantastic flavor.

    What better way to get in a nice big serving of veggies than to serve them atop noodles with a delicious Asian-style sauce smothering everything! This Savory Vegetable Stir Fry dish has become a family favorite of ours because not only is it healthy and delicious, but it’s a breeze to prepare.

    Feel free to mix it up with the veggies and toss in whatever you have on hand. It also works great with cauliflower, bok choy, zucchini, carrots, and snap peas.

    You could also serve this over brown rice or quinoa if preferred, and it reheats brilliantly the next day, so make sure to make some extra for leftovers!

    Roasted Chicken Breasts with Tomatoes and Garbanzo Beans

    There’s little I love more than a meal that delivers wonderful presentation and flavor but with very little effort and prep. This Roasted Chicken Breasts with Tomatoes and Garbanzo Beans dish is such an amazing and healthy Weight Watchers recipe that boasts tender, juicy chicken that is wonderfully seasoned, and yet it is incredibly simple to make.

    The fresh tomatoes add a nice touch of acidity while the garbanzo beans add a nice earthy flavor. I chose to cook this with bone-in and skin on chicken breasts because it really helps to keep the chicken moist. Just make sure to remove the chicken skin before eating if you are watching your Weight Watchers Points.
