Can enchilada stuffed peppers be frozen?

I get this question all the time! The answer is YES, you can freeze stuffed peppers! Be sure everything is fully cooked and cooled before freezing, and be sure to wrap them well (in plastic wrap) and store in an airtight container.

You can also store them in the fridge instead, if you know you’ll be reheating and eating them within 3-5 days. Makes them a great meal to make for your favorite new mama, friend in need, or spouse for work the next day. High fives all around!

Ingredients

Instructions

  • Preheat oven to 350F. Line a baking sheet with foil (we love REYNOLDS!) and set aside.

  • In a medium skillet, heat ground beef over medium high heat, crumbling as you cook. If there is extra oil after your beef is fully cooked, drain and return to the heat.

  • Stir in the taco seasoning and stir until well coated. Toss in the onions and allow to cook with the beef.

  • When beef is almost cooked through and onions begin to become transluescent, stir in the green chiles and enchilada sauce. Turn off heat. Set aside.

  • Cut the top off each pepper and hollow out the inside; removing ribs and seeds. Place each pepper on the baking sheet.

  • To stuff each pepper, start with several spoonfuls beef, then half cup cheese, then fill nearly to the top with beef. Top with another 1/2 cup cheese (depending on size of the pepper, 1/4 cup cheese would be enough. Whatever covers the top to your liking), and place the top back on the pepper. Repeat with remaining peppers.

  • Bake for 30-40 minutes or until peppers are tender and cheese is melty.

  • Serve immediately with sour cream and cilantro if desired.

  • Enjoy!

FAQs

Why are my stuffed peppers soggy? ›

First and foremost, it's essential to precook your peppers. Bell peppers contain more than 90% water, much of which is released during the cooking process. If you cook your stuffed peppers in one fell swoop, that moisture will release and end up in the final dish.

Do you have to boil peppers before stuffing them? ›

You can, but I prefer not to. The peppers are easier to fill when they're still raw, and this way they still retain a little bit of texture after they've been baked. If you do cook them before stuffing, make sure not to over-bake them—you want them to be tender, but not mushy or soggy.

How do you cook peppers so they are soft? ›

To boil bell peppers: Cook peppers, covered, in a small amount of boiling salted water for 6 to 7 minutes or until crisp-tender. To sauté bell peppers: Heat a skillet with 2 to 3 tablespoons of cooking oil over medium-high heat. Carefully add bell peppers and cook until just tender, about 10 minutes.

What are the ingredients for stuffed peppers? ›

Why do stuffed peppers take so long to cook? ›

It's possible to stuff peppers with a raw filling. If you're stuffing a whole pepper, it takes awhile to cook because the filling needs to reach a safe temperature.

How do you keep peppers from getting soggy? ›

Once they are sliced, the best way to store green peppers, or any other peppers, is in an airtight container or sealed plastic bag. You can also put them in a bowl and seal them tightly with plastic wrap. Once they're properly sealed, place them in the crisper or produce drawer away from any raw meat or cooked food.

How to keep stuffed peppers from getting watery? ›

How to Prevent Watery Peppers
  1. Pre-cook Peppers. When you bake peppers that are not pre-blanched or cooked, it is normal that they release their natural water – which can be easily avoided by pre-cooking beforehand. ...
  2. Use Leftover Rice. Does this tip sound familiar to you? ...
  3. Save Cheese for the Topping.

How to cook peppers without getting soggy? ›

Cut in thin strips and quickly sautee

If what is desired is a slightly denser texture, oil blanching (a polite term for quickly deep frying the vegetables) might help - the pepper pieces will shrink slightly, reducing water content and potentially intensifying taste.

How do you crisp soggy peppers? ›

Peppers are a tricky bunch, with their ability to bounce back depending on the type of pepper and the thickness of the skin. If they've lost their crispness and you want them for salads, you can slice them up and try a 10 minute ice bath in a bowl. You can also pickle the peppers, even in their limp state.
